Happy Halloween!!

Well, friends, Halloween is finally here and I'm very excited about it! I will post tomorrow on our events of the weekend, but today I just want to talk about today! Halloween was not always at the top of my list growing up. I was super shy and was terrified to knock on people's doors and ask them for candy- luckily my brothers looked out for me and shouted "TRICK-OR-TREAT!" so loud that it didn't matter if I did or not. I didn't like being cold and my feet would hurt running from door to door, not to mention that I would always give myself the worst stomach ache from eating my candy too quickly. But looking back now, those were the things that made Halloween... well, Halloween! I would do it over and over again if I could. Here are some former Halloween shots that were accompanied by awesome memories:

Just a toddler in a pumpkin patch... rockin' a sassy hat -AND- Baby Annie Oakley.

No explanation needed. I owned that bunny suit. -AND- Mermaid in 1st grade- my hair is supposed to be seaweed.

2007: In college, I was Tinkerbell. We went to First Ave in Minneapolis and rocked the night away! Yes, I was platinum blonde at this time... yikes.

2008: Little Red Riding Hood... not that you can tell from this photo, but I foolishly forgot to charge my camera this night.

2009: I was Marilyn Monroe and Scott was a vampire.

2010: I'm an Eskimo girl and Scott and Gizmo are my sled dogs. :)

2011: Scott was an Old West bartender and I was his saloon girl!

So those are just some of my favorite looks over the years. We don't usually do a whole lot for Halloween, but this year I managed to get some festive foods going. Today, I want to share with you a new recipe I found on Pinterest that I tried out and is simply delicious and SUPER easy! Try it tonight!

Pumpkin Fluff Dip

What you need:
  • One 16-ounce container of whipped cream, thawed
  • One 5-ounce package of instant vanilla pudding mix
  • One 15-ounce can of pumpkin pie
  • One teaspoon of pumpkin pie spice
  • *Optional: 1/2 teaspoon of ground cinnamon*
1) In a large bowl, mix together pumpkin, pudding mix (just the mix, you don't make it into pudding), and the pumpkin pie spice.

2) Add the whipped cream and blend thoroughly. I left just a little bit out to put on top when serving.

3) *Optional: Add the ground cinnamon and mix in*

4) Let chill in the refrigerator, covered, for 1-2 hours

5) Add the remaining whipped cream on top and serve with ginger snaps, cinnamon graham crackers, vanilla wafers, or apple slices... anything goes!

It is so delicious and I can't wait to bring it to our family Thanksgiving dinner. I'm not a cook by any means, but this is something any of you can manage. ENJOY!

Happy Halloween, friends!

That dip sounds so yummy! It's a good thing pumpkin stuff only comes out 2 months of the year (for the most part) because I gorge myself in it so much that I need 10 months to recover haha!
